Putumayo and the cacao tree

Putumayo is a department in the south of Colombia, on the borders with Ecuador and Peru. The World Checklist of Vascular Plants places Colombia within the native range of Theobroma cacao, which runs from Costa Rica through Colombia, Venezuela, the Guianas, Ecuador and Peru to northern Brazil. GBIF gives Theobroma cacao L. as the accepted name, in the mallow family (Malvaceae). One of the product photos shows a cacao tree hung with large red pods.

How the supplier describes the bar

The supplier states that it works directly with small-scale cacao farmers in the Putumayo region. According to the supplier, the beans are harvested by hand, dried in the sun and ground on stone, without industrial processing. The box is made of kraft paper; its illustrated wrap shows two mirrored faces with painted cheeks and joined hands above a green label panel. For another Colombian cacao of the same weight, see the Arhuaca cacao, 450 g; for a bulk format, the Peruvian Criollo cacao in a 5 kg block.

Preparing and enjoying

Ceremonial cacao is pure cacao paste: grate or chop it, then melt it in hot water or milk without letting it boil. Teas and leaves are infused as directed on the label.

Precautions

  • Cacao contains theobromine and a little caffeine; guayusa, mate and guarana contain caffeine: keep to moderate amounts if you are pregnant, sensitive to caffeine or have a heart condition.
  • Theobromine is toxic to dogs and cats: keep cacao out of their reach.
  • If a blend contains other plants, read their product pages before use.

Storage

Keep cacao and teas dry, in a closed container, away from light, heat and strong odours.
