From pod to box

The supplier describes the steps behind this cacao. The pods are harvested by hand, the beans are fermented and then dried in the sun, and the cacao is sorted by hand at Origen Cacao’s site near Medellín before it is packed. The photos on this page show cacao pods on the tree and beans being sorted on a cloth. The supplier also states that no sugar is added.

The cacao tree

Theobroma cacao is an accepted species of the mallow family (Malvaceae). In the World Checklist of Vascular Plants its native range runs from Costa Rica through Colombia and Venezuela to the Guianas, Ecuador, Peru and northern Brazil. The supplier lists the plant part of this product as seed.

Storage

Because the cacao is granulated, the supplier notes that it can soften and melt in warm months. Keep the box in a cool, dry place out of direct sun. For another Colombian cacao in the same weight, pressed into a bar, see Putumayo cacao from Colombia.

Preparing and enjoying

Ceremonial cacao is pure cacao paste: grate or chop it, then melt it in hot water or milk without letting it boil. Teas and leaves are infused as directed on the label.

Precautions

  • Cacao contains theobromine and a little caffeine; guayusa, mate and guarana contain caffeine: keep to moderate amounts if you are pregnant, sensitive to caffeine or have a heart condition.
  • Theobromine is toxic to dogs and cats: keep cacao out of their reach.
  • If a blend contains other plants, read their product pages before use.

Storage

Keep cacao and teas dry, in a closed container, away from light, heat and strong odours.
