The distinguishing feature of Shiitake mushrooms lies in their low air humidity requirements, unlike other farmed fungi. Instead of a conventional greenhouse, a mere plastic bag serves the purpose. To begin the spawn run phase, the fully matured Shiitake mycelium is removed from its initial bag and rested on a flat surface at ambient room conditions (20-25°C). To maintain optimal moisture levels and promote growth, cover the Shiitake culture with a larger bag and spritz the inner surface with water.
Originating from Japan, the term "Shiitake" is a blend of "Take" (mushroom) and "Shii" (Pasania-tree), symbolizing its affinity to grow on trees. This culinary gem, deeply rooted in the histories of Japan, Korea, and China, has been celebrated for its distinctive traits for over millennia.
For years, Shiitake mushrooms have been the subject of extensive scientific studies, revealing their potential anti-cancer properties. The active ingredient, a polysaccharide named lentinan, is thought to be the powerhouse behind these therapeutic qualities. Furthermore, Shiitake extracts display a spectrum of immune-boosting properties, from combating viral infections to potential treatments for severe allergies and joint inflammations.
One cannot overlook Lenthionine, a primary flavor component of Shiitake, which offers promising prospects in treating clot-related conditions. A distinctive feature of Shiitake is its role as a rare vegan and kosher source of Vitamin D2. Notably, a patented compound extracted from Shiitake promises cellular rejuvenation, making its way into Aveno's moisturizing solutions.

For best results, hardwood supplements like oak, beech, birch, alder, chestnut, and pasania are recommended as the ideal substrate. Mirroring their natural habitat, hardwood logs are preferred for cultivation. For those opting for indoor cultivation, the hardwood can be fortified with oat, wheat, rice bran, or soy hulls to enhance mushroom yields. However, excessive supplementation might lead to irregular mushroom growth.
